What is Rennet?

Rennet is a natural biological enzyme, meticulously extracted and refined from the unripe fruit of natural Papaya utilizing advanced bioengineering technology. With a molecular weight of 36,000, it classifies as a sparse group (-SH) enzyme. The incorporation of rennet significantly enhances the coagulation process, producing fresh or short-term fermented mature cheese, thus birthing innovative cheese products. This pivotal development has greatly stimulated cheese consumption in China, consequently fostering the growth of the cheese industry.

Function
